If you're looking for a mid-week treat that won't throw you completely off the wagon, you're in luck with today's blog post! For those of you with a sweet tooth, these brownies will satisfy your sugar cravings, whilst providing you with plenty of nutrients at the same time. What's not to love? They're also paleo-friendly, gluten and dairy-free, so suit most dietary requirements.

The sweet potato makes them perfect for some post-WOD refuelling, so cook up a batch for your box buddies - if you can bring yourself to share!

Ingredients

A medium-sized sweet potato,
4 tbsp butter (melted),
4 tbsp honey,
3 eggs,
3 tbsp coconut flour,
2 tbsp unsweetened cocoa powder,
1 tsp baking powder,
Zest of an orange,
Juice of half an orange,
A pinch of salt,
A bar of 85% chocolate. 

Making the Brownies

First you need to heat the oven to 175ºc, and bake the sweet potato until it's cooked all the way through. When it's done, remove the skin and mash what's left.

Mix in the wet ingredients first, then the dry ingredients.

Roughly chop the chocolate into small pieces, then stir into the brownie mixture.

Pour into a baking tray, and bake for around 25 minutes, again at 175ºc. When they're done, allow them to cool before cutting into squares.

Try not to eat them all at once!
